This is the sharpening system I use with various grades of stones and as you can see the blade is toward the sharpener and exposed so care is needed but it does produce a very nice edge.

I'm stepping back a few posts, but what do you think about boiled linseed oil as a rust preventative? A short internet search indicates it may be a good plan for a non-toxic treatment.
If you mean for the knife in general storage, when not in use or what I use when posting the knives off and they will be in the sheath for a couple of weeks and may be in high humidity environment, I have changed from the general oils I had been using and now use chainsaw bar oil for its sticky content as I know it will "stay" on the blade.
I havent tried BLO for the simple reason that it sets on the steel (during handle finishing) and leaves a yellowish residue which needs a good rubbing with denatured achahol, turps or similar to remove. When the knife is going to be used for hunting or meat prep then a wipe off with a clean rag and denatured alchahol and it is ready to go with a simple cooking oil as preventative for day to day use.
With a little down time I was able to get all my standard patterns transfered to sheet steel and hung on the wall
I now have a pic of them that can be used when I am asked what I make and then a decision can be more easily made as to were to start the discussion from.
I have been working on a web site for a couple of weeks and now have it it up and running so I can easily point those to it who are asking for information on what knives I make and what options are offered.
