    In addition to the suggested ways of braising or roasting, consider sous vide or solar oven cooking as well for no-maintenance ways of slow cooking which will drastically soften tough meat without any flavor changes (unless you want to change the flavor, in which case of course you can).

            Why not butcher it and cook the individual cuts as you need them?

              Whatever you do, do not salt the meat until you are done cooking, most people screw up and salt the meat from the beginning . My old chef from culinary school said salt ans pepper only when eating. Salt at the end pepper at beginning. salt draws moisture out.
