Hunting Spotting Scope

I am in the market for a target shooting spotting scope. I look at the reviews and always find something I do not like very much. Yes, I know they are people's opinions, and so on.
I would like to keep the price in the low range of $ 400, if possible. I have AR-10 configured for long distances at a distance of about 700 yrds.

My question... is 700 yds your actual ethical hunting distance? My vortex scope on my 6.5 creedmoor target rifle ( a 30 mm scope) can see well out to 700+ but I don’t think I would take a hunting shot with it beyond 550-600.
