I believe the potato canon would be classifed as a smoothbore and would need to have an 18" barrel and OAL of 26".
12 gauge shotguns are over 50 cal already so no violation there of overbore weapons.
I think if you cut the potatoes into fries before firing it might be classified as a quick potato cooker.
